Everything at Sparkybeta is baked on-site before sunrise in a warm terracotta-cream kitchen — laminated, fermented or filled by hand every single morning.
Our croissants follow a traditional French lamination method: a block butter détrempe is folded and rested over two days before shaping. The result is a shatter-thin outer shell, a layered honeycomb interior and a flavour that is unmistakably buttery without being heavy. We bake two batches — a plain butter croissant and one filled or topped variation that changes weekly. Recent examples include smoked cheese and chive, dark chocolate and orange zest, and a seasonal apricot preserve from a Karoo producer we have worked with for three seasons. All croissants are baked before 06:30 and the remaining stock is never held over to the following day.

A short-crust shell filled with vanilla custard and topped with whatever fruit is at its best that week — figs, grenadillas, stone fruit or citrus depending on the Eastern Cape season.
A 24-hour cold-fermented blend of stone-ground white and wholegrain flour. Baked in cast iron every weekday morning, available whole (R85) or half (R45). Pre-order by Thursday for Saturday.
A compact, dense rye roll scattered with sesame, sunflower and poppy seeds — baked in a small batch daily. Perfect alongside the lunch menu or on its own with salted butter.
Sourdough fermentation cannot be rushed. Our country loaf goes into the fridge for its final proof at 18:00 the previous evening and into a cast-iron combo cooker at 05:30 the following morning. That schedule limits us to one bake per day and a fixed batch size of 12 whole loaves. On busy weeks we sell out entirely before the cafe opens. We do not bake more to meet demand — the process dictates the quantity, not the other way around. If you want a guaranteed loaf, pre-orders open each Thursday at midday via email or by calling the counter.
